Serves: 4-6
Prep time: 20 minutes
Marinate time: 2-4 hours (or overnight for best results)
Cook time: 20-25 minutes
Ingredients
- 500g ground beef (lean if possible)
- 1 cup finely chopped onion (squeeze out any extra water)
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 2-3 green chilies, finely chopped (adjust for spice level)
- 3 tbsp chopped fresh coriander leaves
- 2 tbsp chopped fresh mint leaves (optional)
- 1 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp garam masala powder
- 1 tsp red chili powder (optional)
- 1 tsp kebab masala (optional, but adds flavor)
- 1 egg
- 2 tbsp gram flour (besan) or crushed papad for binding
- Salt to taste
- Oil for grilling or frying
Method
Prepare the mince
Place the beef mince in a large bowl. Add the chopped onion, garlic paste, ginger paste, chilies, coriander, mint, lemon juice, cumin, coriander powder, garam masala, red chili powder, kebab masala, egg, gram flour, and salt.
Mix thoroughly
Use your hands to mix until everything is fully combined and the mixture feels sticky. This helps the kebabs hold their shape.
Marinate
Cover the bowl and refrigerate for at least 2 hours. Leaving it overnight will develop an even better flavor.
Shape the kebabs
Wet your hands to prevent sticking. Take a small amount of the meat mixture and form it around a skewer into a long, thin sausage shape. Press gently so it sticks to the skewer.
Cooking options
- Grill: Preheat your grill to medium-high heat. Grill kebabs for 15-20 minutes, turning and brushing with oil until browned on all sides.
- Pan-fry: Heat a little oil in a non-stick pan over medium heat. Cook kebabs, turning carefully until evenly cooked and browned.
- Oven: Bake at 200°C (400°F) on a lined tray for 20 minutes, turning halfway through.
Serve hot
Enjoy with naan, paratha, or rice. Add salad, lemon wedges, and mint chutney for a fresh touch.
Tips for authentic flavor
- Don’t skip marination – it makes kebabs juicier and tastier.
- Squeeze water out of onions so kebabs don’t fall apart.
- Brushing with oil while cooking keeps them moist.
