Shepherd’s Pie is the perfect dish when you need something warm, filling, and full of flavor. With a savory meat and vegetable base topped by creamy mashed potatoes, it’s a classic that never goes out of style. Ingredients:
For the filling:
- 500g ground lamb (or beef for Cottage Pie)
- 1 large onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup peas
- 2 tbsp tomato paste
- 1 cup beef or chicken stock
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 2 tbsp flour
- Salt & pepper to taste
- 2 tbsp oil or butter
For the mashed potatoes:
- 4 large potatoes, peeled & cubed
- 4 tbsp butter
- 1/2 cup milk
- Salt & pepper to taste
Instructions:
Prepare mashed potatoes:
- Boil potatoes in salted water until tender (about 15 minutes).
- Drain, mash with butter and milk until smooth. Season with salt and pepper. Set aside.
Make the filling:
- Heat oil in a large pan over medium heat.
- Add onion and carrots; cook 5 minutes until soft.
- Add garlic and ground lamb; cook until browned.
- Stir in tomato paste and flour; cook 1 minute.
- Add Worcestershire sauce, stock, thyme, peas, salt & pepper.
- Simmer 10 minutes until thickened.
Assemble:
- Preheat oven to 200°C (400°F).
- Spread the meat filling evenly in a baking dish.
- Top with mashed potatoes, spreading them out with a spatula. Use a fork to make decorative ridges.
Bake:
- Bake 20 minutes or until the top is golden and crispy.
- Serve hot — perfect with steamed greens or crusty bread!
